I got this recipe from the Martha Stewart website but I changed it a bit:
2 heads of Bibb lettuce
2 stalks of celery, chopped
1 apple, diced
1/4 c. toasted almonds
1 or 2 breast of chicken grilled
2 chopped tomatoes
Mix these together and top with this yummy lowfat buttermilk dressing:
3/4 cup low-fat buttermilk
1/4 cup light mayonnanaise
2 tablespoon fresh lemon juice
2 tablespoon minced chives
2 tablespoon chopped parsley
Coarse salt and freshly ground black pepper
