This is a great alternative to a rice side dish
4 Servings
1- tablespoon butter
2- teaspoons crushed or chopped garlic
1- small onion,chopped
1- teaspoon dried thyme
1- cup uncooked quinoa (I used red)
Sautee these together until onion is soft and fragrant
add:
2- cups chicken broth
1- tablespoon dried parsley
1/4- teaspoon salt
Cook for about 15 minutes or until all liquid is absorbed and quinoa is tender
Add: some fresh squeezed lemon juice to taste.
Serve warm and enjoy!
